Started my 2012 Tucson yesterday morning to leave up north and the awd warning light stayed lit. Drove about ten miles and stopped for coffee. When I started the car the light went out. Stopped for lunch and when we left and started the car the light stayed on again. Not noticing any change in the way the car drives. This morning when I started the car the light went out. Any guesses. ??? would this warning light leave a code in the system ?

A check engine light would for sure set a diagnostic trouble code
But, the dash warning lights are another story.

My guess is you got some kinda Karma which can't make up it's mind ... lol
    Sorry, don't know.

My 2012 Tucson has a little over 68,000 miles and the AWD warning light has briefly come on twice now. And I'm smelling a hot plastic kind of smell in the car. Any ideas?

No experience with newer models but, sounds like your AWD may be stuck in '4WD' mode.
